The menus at our lodges and aboard our river cruises are carefully crafted by local chefs who transform the rich biodiversity of the Brazilian Amazon into unforgettable dining experiences. More than a culinary expression, our gastronomy embodies a responsible “jungle-to-table” philosophy, where seasonal ingredients, regional suppliers, and traditional knowledge take center stage.
Over the years, we have refined a delicate balance: combining nutritional value with inclusivity, cultural authenticity, and environmental responsibility. Our close relationships with local farmers and community producers, those who know these ingredients better than anyone, have allowed us to weave their expertise directly into our value chain.
The essence of our cuisine lies in celebrating conservation through flavor: from cassava grown a few kilometers away, to a pantry that expands into the forest itself. Each ingredient is honored for its origin and seasonality, ensuring sustainability remains at the heart of every dish.
Our menus embrace diversity, from signature creations to time-honored Amazonian recipes and globally inspired reinterpretations, all rooted in the wisdom of the rainforest and the people who call it home.
Our Private Rainforest Refuge runs on a hybrid energy system that combines solar power with the local electricity grid, ensuring reliable 24-hour availability while maintaining energy efficiency. Currently, hot water is supplied by the grid, with a planned transition to solar heating in 2026. Even in the heart of the forest, guests remain connected thanks to satellite internet access.
Refrigeration at the lodge is supported by grid-connected units, while the kitchen operates on gas for consistency and reliability. On our Manakin and Zaltana river cruises, a hybrid solar-and-generator system ensures refrigeration, and the kitchens also rely on gas, an essential solution for smooth performance in remote locations.
Waste management is at the core of our sustainability practices. All non-biodegradable materials are transported to the city for appropriate disposal, while organic kitchen waste is reused as feed for our chickens, closing the cycle in a practical, ecological way.
To further reduce impact, single-use plastics are strictly banned. Drinking water is offered only through refills in reusable containers, with refill stations equipped with ceramic filtration systems available throughout our facilities. Effluents are handled with care: gray and black water are treated separately using a biodigester and sedimentation process, preventing contamination and ensuring water safety. Fresh water is drawn responsibly from underground mineral springs, using gravity flow and electric pumps.
